CURE®’s second episode of its cooking show, Heal at Home, is here! And this time, we are bringing cancer survivors, patients and their loved ones the nutrition with a dash of holiday cheer.
‘Tis the season … for new holiday recipes! CURE® has everyone covered on what to bring to those holiday parties with a special episode of Heal at Home.
In this episode we’ll be showing cancer survivors, patients and their loved ones how to make three different recipes perfect for the holiday season. And we have made sure that they are easy to make, and full of nutritious value!
Our first recipe is for a delicious cranberry orange relish,which could be a great spread to accompany turkey at the dinner table. You could also follow our steps and spread it on a cracker with a little bit of goat cheese sprinkled on top — it will make a great addition to the appetizer station!
-1 bag of fresh cranberries
-1 tsp cinnamon
-3 Tablespoons maple syrup
Place all ingredients in food processor or blender and "chop" for a few minutes or until cranberries and orange are broken into small pieces and blended together. Refrigerate for 30 minutes.
To serve: Can be served as a cranberry relish at a Friendsgiving or with turkey. Can also be served as an appetizer on crackers with cheese and relish or bread with goat cheese and cranberry relish.
The next recipe is sure to satisfy that sweet tooth! Our in a hurry pumpkin bread only calls for three ingredients, or four if you want to add in some dark chocolate chips! The difference with our pumpkin bread is that we used pumpkin puree instead of olive oil as other recipes normally call for. Wondering why? -1 box pumpkin bread mix from your favorite store
-2 large eggs
-1 can pumpkin puree
-Mix box mix, 1 can pumpkin puree, and 2 eggs in a bowl.
-Place in oven at temperature on box and cook for the same amount of time.
And our last recipe is a two for one — we are giving you a recipe for a refreshing holiday salad and a delicious, homemade dressing to accompany it. This salad is great because not only is it tasty and healthy, but it also calls for pomegranates which are rich in antioxidants and vitamin C — not to mention they bring a great, festive color to the salad!
-1 package butter lettuce
-1 pear (optional)
-goat cheese (optional)
-1/3 cup pecans
-1/4 cup olive oil
-1/8 cup balsamic vinegar
-2 tsp dijon mustard
-2 tsp maple syrup
Pour all dressing ingredients in mason jar and mix thoroughly. Can double recipe for bigger salad. Place washed lettuce in serving bowl. Pour dressing, to taste, over lettuce and stir. Once lettuce has been lightly coated with dressing, add pecans, pomegranate, pear, and goat cheese. Toppings are prone to fall to the bottom of the bowl in salads; best to not mix thoroughly as they will naturally fall.
