A good source of Vitamin C and B Vitamins, this sweet potato salad also contains fiber and protein that’ll help fill you up and power you through whatever your day may hold.

Sweet Potato Salad Recipe

Ingredients:

  • 2 large sweet potatoes, peeled and diced into ½ inch cubes
  • ¼ cup feta
  • ¼ cup chopped walnuts
  • ¼ cup raisins
  • ¼ cup reduced balsamic

Instructions:

  1. Steam the sweet potatoes until tender, about 7 — 10 minutes.
  2. Once cooled, add the cheese walnuts and raisins. Lightly mix.
  3. Toss with the balsamic and serve cold.
