Tired of boring “greens and veggie” salads? This slightly sweet and slightly savory summer salad from the oncology dietitians at the John Theurer Cancer Center pairs well with any main course and can be prepared in no time at all – because it only contains only five ingredients!

A good source of Vitamin C and B Vitamins, this sweet potato salad also contains fiber and protein that’ll help fill you up and power you through whatever your day may hold.

Sweet Potato Salad Recipe

Serves 4
Ingredients:
  • 2 large sweet potatoes, peeled and diced into ½ inch cubes
  • ¼ cup feta
  • ¼ cup chopped walnuts
  • ¼ cup raisins
  • ¼ cup reduced balsamic  
Instructions:
  1. Steam the sweet potatoes until tender, about 7 – 10 minutes.
  2. Once cooled, add the cheese walnuts and raisins. Lightly mix.
  3. Toss with the balsamic and serve cold.
